| Description: Lomo, air-dried pigfillet, is the favourite of many amongst the many Spanish delicacies. It is especially appreciated for its low-fat contents and the anyway full flavour. The very best pieces are dried and matured in a mixture of garlic, paprika, sugar and other spices to create its unique taste. Lomo is served in very thin slices with a few drops of extra virgin olive oil. Perfect as Tapas together with a piece of Manchego-cheese. |
