Deep garnet-red with an intense perfume of black-cherry jam, liquoice and dark chocolate. The palate is very full-bodied and velvety textured with ripe, black cherry fruit and solid fruit tannins leading to a long finish with notes of Cinnamon and walnut.

VINIFICATION

The fully mature Grapes are carefully picked by hand. After a drying period of over 100 days, the grapes lose up to 40% of their weight and the sugar level is concentrated. The grapes are then pressed and the slow fermentation begins at a very low temperature. The yield is 40 litres
per 100 kilos of fresh grapes. After an aging period in stainless steel vats, the wine is fined ins mall oak barrels for at least 2years, followed by 6 months refining in bottle.

PRODUCTION AREA

The grapes are sourced from the very best vineyards of the Valpolicella Classico zone, in the hills around the villages of San Pietro Incariano and Marano.
