This product can block the chain reaction of spontaneous oxidization of fat and chelate metal ion in transition state. As a primary and secondary antioxidant, it also can be widely used in many food systems with dosage of0.005%～0.05%. It is superior to competing products in the application in meat product processing,that it not only has similar anti-oxidation effect with VE, but when formulated with Vc or sodium isoascorbate it can also enhance the safety of meat products by reducing the use of nitrate or nitrite and the residueof nitrite, thus improve the quality of products in color, texture and water retention property.
