The preparation is gained from the metabolism of Penicillium. It can hydrolyzeB-glucan into oligosaccharide and glucose. B-glucanase is a safe enzyme preparation for food, which is measured up by related internal and international standard.
ACTIVITY of ENZYME:
One activity of (u/ml) ofB-glucanase is defined as that quantity of enzyme that can liberate 1μg glucose in one minute at pH of 5.0, at the temperature of 50 .
B-glucanase > 3300000 u/ml
In the process of hydrolysis, the produce of glucose and d isaccharide will inhibit the process of reaction.
APPLICATION:
You can use the preparation between pH of 4.0~5.5, at the temperature of 20 ~60 .But the best effect can be displayed at pH of 4.8, at the temperature of 50 . If you can remove glucose and d isaccharide , the hydrolyzation will continue.
