Vinification: stemming and crushing; maceration on
skins for 8-9 days; temperature controlled fermentation, ageing in fine grain French oak casks and barrels, followed by 12 month’s bottle ageing.
Colour: garnet.
Bouquet: persistent and penetrating with scents of liquorice and rose.
Flavour: elegant, harmonious, dry, austere.
Serving: serve at a temperature of 20°C, opening the bottle a few hours before pouring into balloon glasses.
Accompaniments: game, roast and braised meats, mature hard cheeses.
