Montevideo beef jerky ® comes from the most valuable cuts of the bovine thigh processed in our Deboning Area.
They are 100% lean and free of tendons and apneurosis. They are later marinated in our special vacuum tumbler to bring out a great, long lasting flavor.
The drying process is checked by measuring the weight loss so as to obtain the requested dryness degree, a final humidity of 30% to 35%.
The quality control is done in our laboratory (humidity, protein, fat, etc.) in order to attain the quality parameters stated in the US Code of Federal Regulations.
