Beta-Glucanase is a glucanase derived from a strain of Trichoderma reesei through cultivation and extraction technique, which can catalyze the β-glucosan in plants efficiently into glucose and other low molecular material, so as to reduce the viscosity of processed plants and animal chymus.
Typical application areas for this enzyme include brewing, FRUIT JUICE production and wine production, as well as the industrial processing which needs the digestion of plant material.
Working Principle
Beta-Glucan is a Polysaccharide that is linked together by beta-(1.3),(1.4) glucosidic linkages, beta-glicanase is an enzyme that take action in the beta-glucan structure beta-(1.3) and beta-(1.4) linkages in the chain causing beta-glucan to break down into lower molecular plysaccharides
