Acrylamide reduction in biscuits 

 

As the baking process implies high temperatures and mass transfers, it creates an appropriate environment for acrylamide formation. Acrylamide is a toxic chemical compound that can lead to serious health conditions (neurotoxicity, etc.). Therefore, bakery producers must provide consumers with natural and healthy products. 

For this purpose, HonghuiBio carried out a trial with calcium lactate pentahydrate at 1.15% and achieved a 32% reduction of acrylamide formation. Sensorial analyses were made on cooked biscuits to confirm that there is no taste nor colour difference between biscuits with and without calcium lactate pentahydrate.
