It is a kind of natural edible pigment extracted from rubiaceous plant gardenia fruit. The main compositions are crocin and cricetin of series of carotinoid pigment. The powder color from primrose to scarlet is soluble in water, but insoluble in oil and absolute alcohol. The environment PH value has little influence on its hue. At PH 2.0-6.0, it becomes a little unstable; at PH 7.0 or above, it is stable.it can be used in the coloring of wine, carbonic acid drinks, juice drink, jam, jelly, candy, cakes, ice-cream, pastry, and puffed food.

In one animal study Gardenia jasminoides significantly lowered serum IL-1β and TNF-α levels in rheumatoid arthritis rats, and its effect had a close relation with inhibitory development of rheumatoid arthritis in the rats. ^[9]

 

A mice study found that genipin was an active constituent in Gardenia that regulated inflammatory activity. Geniposide from Gardenia enhanced glutathione content in rat livers. Glutathione is an important immune system amino acid that helps determine modulation of immune response, including cytokine production

Gardenia Yellow can be widely used in Instant Rice & flour products, raw-wet flour ptoducts,raw-dry flour products, cereal products fillings,cocoa products,Chocolates and chocolate products,fruit-flavoured beverages,beverages of fruit and vegetablejuice (pulp), frozen drinks(edible ice excluded),candy,cakes, preserved fruits, jelly, puffed food, canned nuts & seeds, imitation wine.
When use Gardenia Yellow, dissolve the color with a small amount of water first, and then mix the color solution with food materials 

 

Usage Reference

 

The maximum usage limit for instant rice & products is 1.5g/kg,for raw-wet flour products is 1.0g/kg, for cereal products
fillings is 0.2g/kg,and for other products is 0.3g/kg.
