Cassava (Also known as Manihot Esculenta) is a woody shrub native to tropical America that is now grown and consumed by millions of people. It’s an edible starch root (tuber) and is a major source of food in countries around the world. Cassava is one of the largest sources of Carbohydrates. The Cassava shrub may grow as long as 9 feet and has leaves deeply divided into lobes. The shrub is often grown annually and is propagated from stem cuttings after the tubers have been harvested.
Cassava tubers are edible and prepared in various forms as food. They are an important source of Carbohydrates and also contain a significant amount of phosphorus, iron and are very rich in Vitamin C. Fresh Cassava leaves contain protein, vitamins, and minerals and are also used as vegetables.
In Africa, Cassava is used to make food such as Fufu, Eba and Tapioca. These are starchy ingredients gotten from treated and dried cassava root and is used for cooking. Garri is another popular food consumed in Africa which is gotten from Cassava.
