Champion Cheddar-Style Cheese
Ashgrove Traditional Cloth Matured Cheddar is made using traditional cheddaring methods and matured in a cheese cloth bandage. Each week during the minimum 15 month maturation, the rind is rubbed with oil and turned. Mould grows on the surface of the cloth bandage slowly forming a crust around the cheese contributing to the cheeses complex cheddar flavour with a slightly musty aroma.
Ashgrove Cheese is located in Elizabeth Town, northern Tasmania and has been owned and operated by the Bennett family since 1993. Ashgrove Cheese specialises in English-style cheeses such as Cheddar, Red Leicester, Double Gloucester and Cheshire
