chitin oligosaccharide is produced by hydrolysis of chitin that has been refined from crab and shrimp shells. Structurally, it is an oligosaccharide that takes the form of several N-acetylglucosamine molecules linked together, and for this reason it is also known as oligo-N-acetylglucosamine". Chitin oligosaccharide is a milky white powder with about one-third the sweetness of sucrose.
