Cocoa (Also known as Theobroma Cacao) is one of the major agricultural products produced in Nigeria. It is an economic crop that grows oblong pods either alternately or asymmetrically on the cocoa tree. It is mostly grown in the raining season. The pods are hard and their shapes appear like melon or baseballs. They come in different colours such as gold, green, yellow or red and are heavy in weight. Each pod has over 30 seeds which when dried are the Cocoa beans. They become violent or reddish brown during the drying process.
Cocoa butter and COCOA POWDER are the intermediate products that would emanate from cocoa liquor by hydraulic presses. The pale-yellow fat obtained by this process is called the Cocoa butter. The residue obtained thereafter is the cocoa cake, which upon grinding gives the cocoa powder.
