Place : Domaine de l’Echalotte 16130 Juillac le Coq 16130 – 15km in the South of Cognac
Grape used : 100% ugni white, a grape with a long period of maturation but with a good opposition against the
grey pourriture. It gives a wine with a good acidity and a weak alcoholic content. –
Composition : A blend of eaux de vie - cognac whose youngest eau de vie at least four or five years old
Geology : The Great Champagne is spread on 13000 hectares of vineyards used in the production of cognac
white wines. This cru gives to the cognac a flourish and smooth taste requiring a long period in old cask. The
company is set up on a day soil and benefit from a sunny oceanic climate with smooth winter and a 13 annual
average temperature –
Distillation : The method of distillation in Cognac is traditional. The transformation from wine to spirits takes place
in a charentais copper-pot still whose capacity is limited 30 hl. The first distillation produces the “brouillis”. The
second distillation produces the “bonne-chauffe” from which only the heart becomes cognac, with an alcoholic
content which must not exceed 72% -
Aging : In French oak cask coming from Limousin containing between 250 – 400 L. in a humid and fresh cellar –
Tasting : With a copper pink colour this cognac has an harmonise, smooth and mild – It has a
citrus and fruity notes with white flesh . tangerine and blackcurrant aromas which give a sweet and
unctuous mouth. Then you can smell Roasted coffee notes. In mouth it is a powerful spirit with a
long finish and a touch of acidity which is completed by chocolate aromas. This cognac is a proof of a
quality product.
