COZEEN(t.m.) 303 N is a natural coating with excellent moisture barrier properties. It is somewhat more hydrophobic than a simple ZEIN film. COZEEN (t.m.) 303 N forms an elastic film around food particulates which extends shelf-life and provides a nutritive, attractive coating.
COZEEN(t.m.) 303 N may be applied by ladling it on or by spraying as the item to be coated tumbles in a revolving pan or cylinder. Intermittent spraying and air drying will generate a continuous film on uneven surfaces. During the drying operation, the pan or cylinder is allowed to revolve occasionally to loosen pieces. COZEEN (t.m.) 303 N dries in 1-2 minutes.
The same method may be used for coating nutmeats; 2 pounds of COZEEN(t.m.) 303 N are recommended per 100 pounds to effectively protect the product from becoming stale. Nuts with depressions such as walnuts or pecans are more uniformly coated by the use of a spray application. If there is a residual taste of the solvent, further air drying for 24 hours is recommended.
For best results, application of 0.8-1.5 pounds of COZEEN(t.m.) 303 N per pound of product to be coated is suggested. The dry solids content of COZEEN(t.m.) 303 N is approximately 30%.
COZEEN(t.m.) 303 N may be applied with the same equipment and methods utilized for confection glaze (edible shellac). There is no limitation on the amount of COZEEN(t.m.) 303 N that may be applied because the product is a nutritious food material.
SUGGESTED USES - COZEEN(t.m.) 303 N is recommended for use in coating nutmeats to provide a shiny, nutritious coating and to coat candies to prevent sticking.
