Food grade sodium polyacrylate
1, the thickening agent. In foods has the following effects: (1) enhance the cohesive force in the raw wheat flour protein. (2) the starch particles combined with each other, scattered infiltration to the protein network structure. (3) to form a dense texture of the dough, smooth and glossy. (4) the dough to form a stable colloid, to prevent the leaking of soluble starch. (5) high in water retention, so that even to maintain moisture in the dough, to prevent drying. (6) to improve dough extensibility. (7) the oil components in raw material and dispersed to the dough. 2, as the electrolyte and protein interactions, changes in protein structure, and enhance the viscoelasticity of food, improving the organization. 3, application examples: (1) the bread, cakes, noodles, macaroni, improve the utilization rate of raw materials, improving the taste and flavor. Dosage: 0.05%. (2) Mi shaped aquatic products, canned foods, dried seaweed, strengthen the organization, maintain a fresh flavor, enhanced sense of taste (3) sauce, tomato ketchup, mayonnaise, jam, butter, soy sauce, thickener and stabilizer.
