Raw product is steamed/boiled in an open autoclave at a temperature of ~105 °C for a period of 3-6 minutes, depending on the size of the shells. After steaming, the product undergoes the following operations:
Shock water cooling;
Meat extraction;
Cleaning of the meat - evisceration;
Machine washing;
Size grading, inspection;
Disinfection;
Washing and draining;
Weighing and packing in polybags;
Freezing in blast freezers at -45 °C;
Packing in cartons, 10 kg semi IQF in one PET bag per carton, 10 kg net weight per carton.
