Fungal amylase is derived from a controlled fermentation of a selected strain of Aspergillus Oryzae . Fungal amylase hydrolyzes starch into maltotriose,dextrose. The enzyme is capable of rapidly hydrolyzing the interior (α-1,4 glucosidic) linkages of gelatinous starch, amylose, and amylopectin solutions yielding soluble dextrins with small quantities of glucose and maltose which is more showing endo type.
Application
Fungal amylase results in syrups with high maltose and low levels of glucose. Fungal amylase also could be used in baking, brewing.

Storage
Store in cool dry place and avoid direct to sunlight .Under this condition, loss of enzyme activity will be less than 5% in six months. It can be longly preserved at temperature of 5°C.
