Gardenia is a plant cultivated in China. Extracting from the fruit of Gardenia jasminoides can obtain Gardenia yellow and Geniposide. By enzymes reaction with proteins in iridoid glycosides of Geniposide can obtain the gardenia blue.
Gardenia blue is soluble in water, alcohol and propanediol. It is stable to light and heat, and has good coloring properties to protein.
