Ice wine from Germany , high quality Eiswein is only produced in certain vintages - when temperatures fall below -7 °C and the Grapes, with a minimum ripeness of 110 °Oechsle, can be hand-picked while frozen. The ensuing crush and fermentation yields a golden nectar that is richly sweet and highly concentrated, with Flavors of ripe peach, Apricot and litchi, and a hint of minerality. The wine has a solid core of fresh acidity which gives it great length and keeps it terrifically balanced.
