Ginger (Also known as Zingiber Officinale) is mainly used as a Spice for food and medicinal purposes. It is used to prevent and cure health problems. Ginger is indigenous to China and is mostly grown in counties such as; South Eastern Asia, Queensland, India, Japan and Nigeria for commercial purposes. In Nigeria, Ginger is mostly produced in the North.

Ginger rhizomes (underground stems) are thick and hard, pale yellow in colour and covered with distichous scales. It is mostly cultivated in the raining season. It needs a lot of moisture and fertilizer (manure) while growing. The crop is often grown on ridges.
Ginger is often harvested between 8-9 months after which it was planted. Ginger for exports are usually packed in Export Polyethylene bags for shipment in 20ft container or in 40ft containers.

Ginger is used for a lot of purposes. Below are some of the most common uses of Ginger. They include;

  • To make spice that adds flavour, pungency and aroma to prepared food. It Spices curry powder, Ginger soda/beer and Ginger wine.
  • It is widely used in the production of Ginger ale, Gingerbread, Biscuits, Cakes and Puddings.
  • To make Ginger tea. Ingredients such as Honey, Sliced Orange and Lemon fruit can be added to the tea to make it more nutritious and tasty.
