The fruit of the ginkgo tree, a tree originally from Asia. Rarely sold commercially, the ginkgo nut is practically unknown in the West. It is covered in a pulpy yellow-orange colored casing that is removed before being sold, as it quickly produces a sour smell after being picked and the juice it contains can cause itching. This casing encloses a smooth and very hard cream-colored oval shell that contains a green-yellow seed (Kernel), the size of a small plum or olive. This kernel is covered in a brown skin; it has a mild, waxy flavor.
