| Glycyrrhizin (or glycyrrhizic acid) is the main sweet-tasting compound found in Licorice root. It is 30 to 50 times as sweet as sugar. Although sweet, the taste sensation of glycyrrhizin is different from that of sugar. The sweetness of glycyrrhizin has a slower onset than sugar has, and lingers in the mouth for some time. Unlike the artificial sweetener aspartame, glycyrrhizin maintains its sweetness under heating. Glycyrrhizic acid is commonly available as its sodium salt or ammonium salt. Usual applications: 0.1% in soft drinks, breads, cakes, Sausages and canned food; 0.25% in shampoo or hairspray; 0.5% in toothpaste. |
