Our Kalamata olives are carefully collected by hands and only the olives that are ripe enough, during a time period beginning from the middle of October till December. We sort out each batch of the new gathered olives by quality and in sizes, and then we put them in olive tanks and barrels with only water and salt, without any other artificial or chemical interference. The olives come to their natural proper edible taste and flavour after about 3 (three) months since they have been placed in tanks and barrels. After this time interval, they are ready for packing and consumption.
 
We would like you to take into consideration that we exclusively talk about the original, traditional KALAMATA variety olives and NOT type of Kalamata nor any other olive variety which may look like Kalamata variety and many olive traders usually sell them as Kalamata olives. It is a common secret that there are a lot of olive traders in the global market who declare that they sell Kalamata variety olives, but in reality in most cases their olives are chemically oxidized and artificially blackened which look like Kalamata olives. The most usual method of oxidizing and blackening olives is putting them in alkaline solution of NaOH for one day, then follows a continuous rinse with hot air for 4-5 days to lower the very high and dangerous PH that the olives absorbed from NaOH, repeating this procedure as many times as needed for the olives to get black and soak the bitterness out of them rapidly. Then during the packing of olives, they add to them preservatives like sodium benzoate, potassium sorbate, ascorbic acid, metamisulfid etc. But in opposition to these methods, the original Kalamata variety olives do not have a uniform black colour but brown-black colour tones and need at least three months since they have been gathered and put in olive tanks or barrels to come to their natural proper edible taste and flavour without any other artificial or chemical interference.
