  Pullulan is a naturally occurring water-soluble polysaccharide produced from starch syrup by fermentation.It is essentially odorless, flavorless, stable and available as a white powder.Molecular formula (C6H12O5)n;

Characteristic

• Solubility: Excellent solubility in cold and warm water. But not soluble in organic solvent except dimethylformamide; dimethyl sulfoxide (DMSO);
• Stability: Compared with other hydrocolloid, Heallan forms low viscous but non-gelling solution in water. And the viscosity is only slightly affected by changes in pH or salt.
•  Lubricity: Solution of Heallan is a Newtonian fluid. Although the viscosity is very low, it has good lubricity Adhesiveness: Very strong adhesiveness after dried, Suitable for making dried food, pill & pelleting.
•  Film Forming: It is easy to form film on food and metal. Meantime, the solution could form water-soluble,transparent, coriaceous film. This film has very strong oxygen barrier property and could be used as smells keeper, water keeper & oil defender.
• Resolvability: Same with Agar, CMC, HPMC
• Mold ability: Under heating & high pressure condition, it could be made to edible fiber and model
