Black salt (Kala namak) is used extensively in Indian cusine as well as in Ayurvedic medicine. Kala namk has a distinctive, strong, sulfuric flavor. The colorr, purplish black, comes from the presence of trace minerals such as magnesium, as well as volcanic iron.
