1. What are Sheets/ Leaf Gelatin?
Sheet Gelatin, also called Leaf Gelatin, works like granular gelatin found in your local grocery store, but in a different form. Rather than a powder, it takes the shape of thin sheets or leaves of gelatin film. The sheets dissolve more slowly than the granulated form, but also produce a clearer gelled product.
Gelatin used in food usually runs from 125 Bloom to 250 Bloom. There are several different grades of sheet gelatin. There are Bronze Sheet Gelatin (140 Bloom), Silver Sheet Gelatin (160 Bloom) and Gold Sheet Gelatin (200 Bloom). Typically the higher the Bloom, the more you can expect to pay.

100% obtained by partial hydrolysis of the collagen (refined from Animal Skin)

Used in molded desserts and salads and to thicken cold soups
4. How to Use Sheets/ leaf Gelatin:
(1) Soak sheets gelatin in a bowl of cold or iced water for 5 to 10 minutes (use about 1 cup/250ml of cold water per sheet)
(2) Once soft, lift sheets from the cold water.
(3) Wring gently to remove excess cold water.
(4) Add sheets to room temperature liquid called for in the recipe. Heat the mixture, stirring until the gelatin is dissolved. Do not boil or gelatin will not set. Do not add chilled liquids or mixtures to gelatin after it is dissolved or it will cause uneven setting.

Keep in a room temperature between 14-20 ° C and a dry place.

9. Tips for Using Gelatin:
(1) Sheets/ leaf gelatin requires soaking in cold/ iced liquid before being added to hot liquid to dissolve.
(2) Always ensure your gelatin is fully dissolved before chilling.
(3) Keep gelatin in a well-sealed, cool and dry place.
(4) Gelatin continues to solidify over time, so the texture and consistency of a dish you have pre-prepared can change by time you serve it.
(5) During the cooking process, boiling can damage the gelatin’s setting capability. Where possible, try to dissolve gelatin away off the heat.
(6) Pineapple, Kiwifruit and other (mostly tropical) fruits contain enzymes that can prevent gelatin from setting. These enzymes, however, are destroyed when the fruits are cooked.
