Curing process 42 months
It comes from an animal which is raised in the “dehesa” pasturelands of the Natural Park of Sierra de Aracena, raised in herd and fed with acorns, mushrooms, olives, and natural plant roots. It is elaborated in a traditional way. The curing process in our cellars and “secaderos” (natural drying areas) follows the traditional rules that were implemented many years ago: combining cool and dry air coming from the locality of Corteconcepción (mountain area of Huelva) with the humidity brought from the rain and the summer moderate heat.
