ISOMALT LM allows the use of numerous process variants during chocolate production. Products made with ISOMALT LM have an excellent taste and a good snap, and melt smoothly. Unlike other polyols, ISOMALT LM has no irritating cooling effect, which leads to a pure cocoa flavour.
Due to its low water content (<1%), standard conching temperatures may be used with ISOMALT LM. In addition, it can easily be refined to any desired particle size. And with its good flow properties, ISOMALT LM supports the flowability of the chocolate mass during liquid storage.
