Canestrato Pugliese is a hard cheese uncooked , made from whole milk of ewes of the kind of Puglia, the origins of which are connected to the merino breed . The name of this cheese comes from the rush baskets in which it becomes mature. And these reed baskets , wicker baskets so-called , are one of the most traditional craft of Puglia. The processing of canestrato Pugliese takes place with a characteristic technology resulting from the tradition of cheese from Puglia. It is a very long process , depending on the size of the forms , ranging from 7 to 14 pounds. During the process, the cheeses are wrapped in reed baskets that give the characteristic roughness of the crust, and these are pressed to make the escape of excess moisture . The salting , which is the basic procedure for the preparation , making dry with coarse sea salt ( typical of saline Margherita di Savoia ) , scattered around the shape. Once removed from the baskets , the forms are set to mature in a cool place . During the maturation phase (at least 90 days) the forms are turned over several times and brush . At the end , the hard and thick crust is treated with Extra Virgin Olive Oil . The duration of the maturation ranges from a minimum of 3 months in order to be consumed fresh , up to about 10 months for use by grater .
