Property: l-arabinose is a kind of aldopentose and also called resin aldose or pectinose. It appears as white crystal powder and tastes sweet. Its melting point is 154—158a??. L-arabinose can easily dissolve in water and glycerol, hardly dissolve in ethanol and does not dissolve in ether.
In the nature, L-arabinose seldom exists in form of monosaccharide. Instead, it is often combined with other monosaccharides and exists in colloid, hemicelluloses, pectic acid, bacterial polysaccharides and some glucosides in form of mixed polysaccharides. It shows high stability to heat and acid. As a low-calorie sweetening agent, it has been listed into category of healthy food additive by FDA and approved as a new resource food by China Health Ministry.
