Red or cardinal red powder Soluble in water.
Produces Orange-red at PH 3-5, produces red to purple-red at PH greater than 7.
Good stability to heat and light in acid condition. Losing colour in alkaline condition. Easily influenced by metal ion especially Fe.
Coloring ability varies as PH varies. It becomes worse and worse as PH close to neutral.
Applicable to soft drinks, jam, confectionary and so on.
Absorbency : ≥ 0.65 .
