Merlot 2011
The grapes harvested on the first week of October are de-stemmed and then left to ferment in stainless steel tanks for about two weeks, at a controlled temperature. When the optimum alcohol content has been reached, the wine is then separated from the exhausted skins, lightly pressed, filtered and left to rest in the cellar until the time for bottling.
