Main ingredient : Mogroside V (CAS #: 88901-36-4 ) is the main cucurbitane glycosides responsible for the sweetness of the fruit. Monk Fruit Extract from Hunan Huacheng Biotech, Inc. contain s up to 60 % M ogroside V.
Safety: Monk Fruit E xtracts are similar in composition to Bi o Vittoria's PureLo ® Luo Han Fruit concentrate, a material previously affirmed GRAS (GRN 000301) with no questions from the US FDA CFSANI Office of Food Additive Safety. However , Monk Fruit E xtracts are more purified and contain up to 60 % mogroside V, compared to the 30% mogroside V in PureLo ® .
Use: foods and beverages, such as baked goods, cereals, confections, dairy products, desserts, including ice cream, dressings and sauces and processed fruit.
Sweetness: The sweetness intensity is tested by the method of "IS0 8587:2006 Sensory analysis--Methodology -Ranking". An original copy of the sweetness intensity results is provided as following.

Dosage: According to the s tudy conducted by Marone et a/. (2008) , a reference dose of 72.8 mg/kg bw/day (30% Mogroside V) may be calculated as being safe for human exposure (EPA, 1993) .
Among normal adults, the highest consumer intake of Monk Fruit E xtract 25% was calculated to be 4.22 mg/kg (Far less than the safe reference dose of 72.8 mg/kg/day in humans). The recommended dosage for Adult is Less 1 7 . 2 mg/kg bw/day .
