Introduction of Monk Fruit Extract

Monk Fruit,also knows as Luo Han Guo (Siraitia grosvenorii, or Momordica grosvenorii), that is mangosteen of cucurbitaceous family, the ripe fruit of a kind of perennial grass liana.

There have been thousands of years that Chinese have known to soak the Monk Fruit in water as a  drink. Traditional of Chinese medicine as well applies it to cure disease, such as high blood pressure, pulmonary tuberculosis, asthma, gastritis, whooping cough, acute & chronic tracheitis and acute & chronic tonsillitis, etc.

Main Components of Mogrosides

Mogrosides, the mixture of cucurbitane glycoside, which have the common mogrol, are comprised with 11 kinds of cucurbitane glycoside which are the Mogroside III, Mogrosied IV, Mogroside V, Mogroside IIE , Mogorside IIIE , Mogrosied A, Siamenside I,11- Oxo- Mogroside V and Neomogroside.

 

Mogroside IV is a component with no sweet taste.
Mogroside A, Mogroside II, and Neomogroside are bitterness substance.
In all cucurbitane glycoside, Siamenside I is the sweetest component, whose sweetness is approximate 563 times of sucrose. But its content in the fruit is very low.
The content and sweet degree both high in all the mogrosides is Mogroside V, the sweet degree of which is approximate 256-344 times.

Mogrosides'  Biological Activity:

Mogrosides, the main active component of Monk Fruit, whose biological activity and functional mechanism can be referred as as followings:

 

1.   In 1999, Chinese researchers Wang Ting and his group tested on the biological activity of 
      mogrosides by mice. Then they discovered that mogrosides is help to expectorant, antitussive 
      and calming asthma as well.

 

2.   In 2002, Japanese scientists Takao Konoshima and Midori Takasaki, and in 2003 Midori 
      Takasaki, they together discovered that Mogroside V and 11-Oxo-Mogroside V are both a strong 
       kind of chemical interdiction reagent through the in vivo and in vitro study . They stop and put a 
      curb on the activation of EBV-EA and the progress of the second phrase of cancerization of 
       mice’s skin remarkable.

 

3.   In 2004, according to Maria Alejandra HOSSEN and his partners’ researches, they discovered 
       the mixtures of mogrosides can stop the tickle caused by histamine medicine in mice’s noses 
       effectively.

 

4.   In 2002, Eiichiro Takeo and his group proved that the extraction of Monk Fruit can effectively 
      restrain the oxidation of low-density lipoprotein. So effectively dose 11-Oxo-mogroside V, whose 
      ability of oxidation depends on the degree of dosage, that is when dosage is less than 50uM, 
     11-Oxo-Mogroside V will not display its capacity of anti-oxidation.
      In addition, 11-Oxo-Mogroside V also shows a certain ability of anti-oxidation to free-radical, but
      it is weaker than V E .

 

5.   In 2005, according to the researches of Yasushia Suzuki and his partners, extraction of Luo Han 
      Guo could restrain the rise of the density of blood-sugar of mice which had eaten maltose 
      effectively, while extraction of Monk Fruit couldn’t restrain that rise on the mice which had 
      eaten glucose.

 

It clearly puts out the special function of Monk Fruit, that is, to lower density of mice’s blood sugar by restraining activity of maltase in small intestines and decreasing absorption of maltose. In case it also works for human body, Mogrosides is hoped to be used for treatment Tyep II diabetes.

 

 
Examples in Practical Application of Mogrosides in Food Industry:
 
Mogrosides can partially or wholly replace sucrose in food industry. For example, add 0.012% mogrosides into dextrin can make soft sweets without adding sugar. When substitute mogrosides for sucrose in biscuits production, the texture and taste will be very nice. When making pickles, to add 0.005% Mogrosides to the solution can reduce costs of salt, while the pickles tastes more crisp and fresh.
 
Mogrosides (Luo Han Guo Extract) can be blended with some other herbal extract (Green Tea, Kuduz, etc) to make into instant tea bag, beside works as sweet properties, Monk Fruit extract will also give benefit like thirst-quenching, diuretie, refreshing, lowering blood-pressure, promoting gastrointestinal function etc...
