Sodium dihydrogen phosphate, also known as acid sodium phosphate, has the molecular formulas of NaH2PO4 · 2H2O and NaH2PO4, with relative molecular weights of 156.01 and 119.98. It is divided into anhydrous substance and dihydrate. Dihydrate is colorless to white crystalline or crystalline powder, and anhydrous substance is white powder or particle. Soluble in water, almost insoluble in ethanol. Acid sodium pyrophosphate is formed when the crystal water is lost at 100 ℃.
Colorless crystalline or white crystalline powder. Odorless, salty and sour. When heated to 100 ℃, all crystal water is lost, and it turns into sodium metaphosphate when heated to 100 ℃. It is soluble in water, almost insoluble in ethanol, and its aqueous solution is acidic. The pH value of 0.1 mol / L aqueous solution at 25 ℃ is 4.5. The relative density was 1.915. Melting point 60 ℃. The commodity also has a molecule of crystal water.
In Japan, sodium dihydrogen phosphate is used as acidity regulator in brewing, dairy products and other food processing; it is used as binding agent and stabilizer in meat products, with the dosage of about 0.4%. According to FAO / who (1984), sodium dihydrogen phosphate is used for: low concentration milk, sweet condensed milk and cream, the dosage is 0.2% (based on anhydrous matter); the dosage of cream powder and milk powder is 0.5%; the dosage of processed cheese is 0.9% (calculated by P); the dosage of lunch meat, cooked ham and cooked meat powder is 0.3% (calculated by P2O5 alone or combined with other phosphates); 1% for instant broth and soup; and cold drink The dosage was 0.2%.
