The quinces cultivated in the territory of Mantua are harvested at just the right degree of ripeness when their intense and characteristic fragrance is perceived.
The fruit has a fibrous flesh that requires suitable cooking to make it pleasant to the palate (in the past the fruit was also used for scenting clothes kept in old wardrobes or chests).
The product is in slices, with a sweet-spicy taste and the characteristic red-orange colour.
