Bromelain is a proteolytic enzyme extracted from pineapple. The broad substrate specificity of bromelain enables the enzyme to easily and efficiently hydrolyze most soluble proteins. Bromelain is best known as a digestive aid and for its anti-inflammatory effects in traumatic injuries and after surgery.

 

Description and solubility

Light yellow or light gray powder with pineapple enzyme-specific odor. Soluble in water and glycerol and other polar solvents, micro-soluble in alcohol, insoluble in ether and other small polar organic solvents, the enzyme solution is colorless or pale yellow.
