Highland barley is the finished product of highland barley after cleaning, peeling, finishing and other processes. It is an important highland cereal, rich in a large number of dietary fiber, and its nutritional components are higher than rice, wheat, corn, high protein and low fat. It is mainly produced in Tibet, Qinghai and other high-altitude areas in China. It is resistant to barren and high cold. Highland barley has the characteristics of "three highs and two lows", that is, high protein, high fiber, high vitamin, low fat and low sugar. The average protein content of highland barley is about 11.4%, which is higher than other cereal crops. Highland barley contains 18 kinds of amino acids, including 8 kinds of amino acids necessary for adults, namely lysine, tryptophan, phenylalanine, methionine, threonine, isoleucine, leucine and valine. The fiber content of highland barley rice is also as high as 16%, among which the insoluble curative fiber is 9.68%, and the soluble curative fiber is 6.37%. The former is 8 times of wheat, and the latter is 15 times of wheat. The content of crude fiber in barley flour is also twice that of wheat flour. Highland barley is rich in various vitamins. Every 100g of highland barley flour contains 0.35mg of vitamin B1, 0.23mg of vitamin B2 and 0.28mg of vitamin E. Barley starch composition is unique, similar to glutinous sorghum, amylopectin generally as high as 70-80%, some varieties even close to 100%. The average crude fat content of highland barley is 2.13%, which is lower than corn, oats, sorghum and buckwheat.
