The oil, packed in 50 cl bottle "Flavia" up, is obtained by secular Olivo growing imported by Basilian monks.
These are only olives produced thanks to a mixture of twelve young coultivars for the production of the oil packed in 0,75 1 or 1 l bottle "Alma ".
This are oils of high performance featuring, both in quality than in organ organogical features: low acidity (0.5 max), low number of peroxides (10??max).
The olives are harvested by hand in exclusively daily cold pressing and only by olives produced in the farm and the final product is not filtered. Moreover to complete this particular system of production, there is the choice of dark glass bottle, to avoid oxidation and to preserve the beginning features of the product .
This is a very ancient oil production and it is at the basis of Mediterranean diet. It becomes very important in modern time as symbol of ancient flavour and in modern diet because of the lack of cholesterol.
