OAs the productions process is under vacuum, the temparature does not exceed 60°C.
OHence HMF does not occur in large quantites during production. Never exceeds the legal limit of 75 mg HMF/kg. Actually 5-6mg /kg values are obtained which is far below the legal limits and harmless.
HMF Why is it Important?
OHMF stands for hydroxymethyl furfural.
OThis substance is a compound whichis a determinant indicator analysis for production control.
OThe bigger amount is an indicative that other unwanted compounds(carcinogenic) are also highly existent.
