We are professional manufacturer of cocoa products( cocoa butter, natural/ alkalized cocoa powder, cocoa cake, cocoa liquor/mass) and industrial chocolate (both couverture/ tempered chocolate and compound chocolate) in China from 1989. They are used for chocolate, confectionery, ice cream, bakery, drinking. Our raw materials are from Ghana, Nigeria, Cote d’Ivoire, which are the largest and best cocoa beans origins in West Africa. Our products have been exported to Europe, America, Latin America, and Middle East, and other Asian countries.
Our processing capacity is 40,000 metric tons cocoa beans per year. We set up one cocoa processing factory in Nigeria, which country is the top three main cocoa beans origins in West Africa to assure our sourcing and quality. All kinds of cocoa products can be supplied by us.
Chocolate liquor (cocoa liquor) is pure cocoa mass in solid or semi-solid form. Like the cocoa beans (nibs) from which it is produced, it contains both cocoa solids and cocoa butter in roughly equal proportion.
It is produced from cocoa beans that have been fermented, dried, roasted, and separated from their skins. The beans are ground into cocoa mass (cocoa paste). The mass is melted to become the liquor, and the liquor is either separated into cocoa solids and cocoa butter, or cooled and molded into blocks known as raw chocolate somewhat like unsweetened baking chocolate (bitter chocolate). Its main use (often with additional cocoa butter) is in making chocolate.
The name liquor is used not in the sense of a distilled, alcoholic substance, but rather the older meaning of the word, meaning 'liquid' or 'fluid'.
