At Grischuna we make raw ham using only the leanest, most tender parts from the top of the hind leg, which are carefully prepared and processed like the larger pieces used for mountain ham. The manufacture of a single raw ham involves three dozen separate steps and the end product is extremely lean, with a pastel pink colour and a fat and protein content that can only be compared to that of Bündnerfleisch.
