Re della Notte (King of the Night) is the new entry in the sparkling arena, it is 100% made with Sauvignon using Charmat method. Our current customers found it competitive and better than Champagne or Prosecco.

SOIL: medium    
EXPOSURE: southeast
COLOR: straw yellow
NOSE: fruity, with fruity and floral notes
TASTE: demi-sec, delicate and elegant
PAIRINGS: wine suitable for every meal, especially with fish, pizza and aperitif. Serve at 8-10°C
YIELD PER HECTARE: 70 HL
HARVEST: first-second week of September
PROCESSING: soft pressing, destemming and fermentation without the skins for about 10-15 days with temperature control
MATURATION: refined in stainless steel barrels, in the bottle for 3 months
