SANGIOVESE is a RED WINE with ancient and noble tradition,
produced all over Italy but mostly located in the heart of
Romagna and Tuscany. Vinified with a mix of traditional
techniques and modern technologies, it is a great typical
Italian wine, which is becoming famous internationally.
AREA: Vineyards overlooking the Rabbi valley Fiumana di
Predappio (Forlì)
Production technique: Grapes are pruned
before turning
dark coloured, collected when they are at optimum ripe and
immediately removed from stalks and pressed. Maceration
with peels lasts 12/15 days.
VINFICATION AND AGEING: Malolactic fermentation
completed for at least 5 months in steel tanks. About 10%
matures in barriques used in second and third passage for a
couple of months.
