Yield: 30 hl/ha. Reasonable cropping for over 20 years; Weeds are controlled in a mechanical way (hoeing-machine). Ploughing is practiced several times in the year with various depths according to the case.
Winemaking: Grapes are gathered manually in small crates, and then selected though a conveyor belt. Steeped and squeezed with grape skin at a low temperature (3°C). Clarification and fermentation are carried out at a low temperature.
Ageing: 2 years, it is appreciated when the wine is young.
Food Pairings: As an appetizer wine, the “Petits Grains de Folie” is a great companion for asparagus, spicy Indian food, Asian or oriental food, Red Mullet and dishes based on melted cheese.
Tasting: A light gold color, this wine is very aromatic with notes of white flowers, geranium and exotic fruits.
