APPLICATION AND USES
Sodium ascorbate is generally recognized as safe as a Preservative (antioxidant). It is also a source of vitamin C and sodium. It is widely used as additive for food industry.
Sodium ascorbate is required for the production of collagen, a protein necessary for the formation of connective tissue in muscles, skin, bones, and cartilage. It aids in the absorption of iron and is needed for the synthesis of bile salts. Sodium ascorbate aids in the metabolism of the amino acids phenylalanine and tyrosine by preventing the formation of potentially carcinogenic nitrosamines in the stomach. It is involved in folic acid metabolism and in the synthesis of many important hormones and neurotransmitters. Sodium ascorbate helps form red blood cells which aids in preventing hemorrhaging and speeds up the healing of wounds. Sodium ascorbate is essential in the formation of adrenaline and is absorbed in the mucous membranes of the mouth, stomach, and upper part of the small intestine.
ADDITIONAL INFORMAITON
1. Sodium ascorbate is useful for preparations where a readily soluble and non-acidic source of Ascorbic Acid is required.
2. Generally, sodium ascorbate is not recommended for preparing a parenteral solution of vitamin C because it tends to promote more rapid discoloration of the preparation on storage.
3. One gram sodium ascorbate is equal to approximately 0.89g ascorbic acid.
