Castilla is a Spanish geographical indication for wines located in the autonomous region of Castila La Mancha.
Availability : Dry, Medium Dry, Medium Sweet for Red, White and Rose Wine.
Description of the vineyards
The vineyard is situated at 722 meters above sea level and lands are chalky and not very deep. These lands are characterised by a temperate and Mediterranean climate and also by an unique microclimate which associates dryness and cold winters with hot summers and humid wind. These conditions don’t enable high yields, (around 5.5 kg per vine), but we still manage to get good quality wines. These vines are ten years old.

It’s a RED WINE which is made with good quality Grapes:

Fermentation
First of all, we control grapes ripeness rate (relations between “baumé” degree and acidity) as well as its colour intensity and its PH. Then we can decide on which date would be the most appropriate for the harvest.
In wine cellar, the wine is immediately elaborated thanks to a soaking process between grapes and must which is made after a slight squeezing. Then the Alcoholic fermentation begins. During the soaking process, we must control very carefully temperature and density to get the perfect balance for tannins extraction and alcohol degree. At the end of this process, badlactic fermentation enables wine to be sweet enough and to structure itself.
Afterwards the wine is lighted up and stabilized by refreshments, and then is filtered to stay clean and shiny. Finally we get him ready to be bottled and consumed with all its quality.

Consumption advice
It is recommended with all kind of meat.
It’s better to preserve it between 15ºC and 18ºC.
