DESCRIPTION OF THE VINEYARD OF CASTILLA LA MANCHA

 

Castilla is a Spanish geographical indication for wines located in the autonomous region of Castila La Mancha.

Area: 79,230 km²

Population: 1, 712,550 inhabitants

Capital: Toledo

 

Location of the vineyard:

Situated in the central plateau of the Iberian Peninsula, La Mancha is the

most extensive natural region of Spain and the most important grape and

wine-growing zone of the world, where you can find the largest area of

vineyard per km².

• Cultivation area: More than 500,000 hectares of vineyard.

• Total production: About 25 millions of hectolitres per year.

 

Fermentation

First of all, we control grapes ripeness rate (relations between “baumé” degree and acidity) as well as its PH and so we can decide on which date would be the most appropriate for the harvest.

 

The Alcoholic fermentation is controlled at 20°C. It’s very important for us to carefully control must fermentation temperature because it enables to maintain wine primary aromas, unalterable as long as possible and to obtain appropriate alcohol degree, acidity and fruitiness to get the greatest freshness.

 

Afterwards the wine is lighted up to eliminate every protean rest, it’s stabilised by refreshments, and then is filtered to stay clean and shiny. Finally we get him ready to be bottled and consumed by the most demanding customers.
