Top Grade Baijiu has the same characteristics as Mingqian tea: preciousness, scarcity and ex-treme quality. Top Grade Baijiu goes into the cellar every spring equinox and opens in the White Dew. It goes through 12 solar terms and 180 days of slow and sufficient fermentation. The fer-mentation period is 3 times as long as that of other ranked Baijiu, which produces a variety of healthy small molecular substances, and the content of molecular substances is much higher than that of other ranked Baijiu.
